White Chili

2 T. olive oil
2 med. onions, chopped
4 cloves garlic, minced
4 cooked boneless chicken breasts, chopped
2 - 14.5 oz cans chicken broth
2 -4.oz cans chopped green chilies
1/2 cup brown rice
1 tsp. cumin
2 tsp. dried oregano
1/2 tsp. cayenne pepper
1 -14.5 oz can great northern beans, drained
1-14.5 oz can corn, drained


Heat oil in lg. pot over med. heat. Add onions and garlic and saute for 10 min. Add chicken, rice, broth, green chilies, cumin, oregano, and cayenne. Bring to a boil. Reduce heat to low, add beans and corn; simmer for 30-40 minutes. Serve in bowls with some shredded colby-jack cheese on top.
