Friday Night Pizza


3 cups all-purpose flour
3 cups whole wheat flour
2 T. sugar
1 tsp. salt
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. dried oregano or basil
1 packet Rapid Rise yeast
2 1/2 cups hot water ( not boiling, but hot to the touch )
2 T. olive oil

1/2 c tomato sauce or jarred pizza sauce
4 cups shredded mozzarella cheese, divided
1/2 cup grated Parmesan cheese, divided
assorted toppings

Measure dry ingredients into large mixing bowl; stir to mix. Add hot water and olive oil and mix with a wooden spoon. Turn out onto a well-floured surface and knead for about 5 minutes, adding flour as needed to keep from sticking. Place dough in clean bowl, cover with a clean dish towel and let rise for about 30 minutes, until doubled.
Preheat oven to 400 degrees F. Spray 2 baking sheets with nonstick cooking spray. Place half of dough onto each pan and spread out with floured hands to desired shape ( rectangle or circle ). Cover each with about 1/2 cup bottled pizza sauce, then with shredded mozzarella cheese - about 2 cups each. Add other toppings as desired - I like turkey pepperoni, chopped green pepper, chopped onion, sliced mushrooms, and sliced ripe olives. Sprinkle with grated Parmesan cheese. Place one at a time into oven and bake for 18-20 minutes.
Remove from oven and cut into squares or wedges to serve. Also tastes great cold for breakfast!
