Blackened Tilapia

 not too spicy ~ if you want more heat, increase the black pepper and cayenne

1 lb. tilapia fillets ( about 4 med. size pieces)
2 T. olive oil

Blackening Rub
3 T. paprika
1 tsp salt
1 T. onion powder
3/4 tsp. black pepper
1/4 tsp. cayenne pepper
1 tsp. thyme
1 tsp. oregano
1/2 tsp garlic powder

Preheat oven to 425 degrees. 
Combine rub ingredients in a small bowl.

Line a sheet pan with aluminum foil, and add 2 T. olive oil, rubbing to spread over the pan.  Rinse and pat dry the tilapia.  Dip in olive oil in the pan, turning the fillets and rubbing to cover with the oil.
Cover the fish with the spices, rubbing it onto both sides.

Lightly spray fillets with cooking spray.  Bake for 10-12 minutes, or until flaky.
