Aunt Ollie's Whoopie Pies

these were my Aunt Ollie's "ticket" to any and every family gathering for as long as I can remember

6 Tbl. Crisco vegetable shortening
1 egg
1 c. sugar
1 c. milk
2 c. all-purpose flour
1 tsp. salt
5 Tbl. cocoa powder
1 1/2 tsp baking soda
1 tsp. vanilla

 Preheat oven to 350 degrees.
Cream together the Crisco and sugar in a mixing bowl until light and fluffy. Add the egg and beat until combined.  Mix the dry ingredients together in a small bowl, and the milk and vanilla in another.  Alternate adding the dry ingredients and milk mixture to the sugar mixture, mixing until combined.
Drop batter by teaspoonfuls onto lightly greased cookie sheets.  Bake 10-12 minutes. Cool on wire rack.

Filling:
1 c. milk
4 Tbl. flour
1 c. sugar
1/2 c. Crisco
1/2 c. butter
1 Tbl. vanilla

Whisk together the milk and flour in microwaveable bowl.  Cook in microwave about 3 minutes, until thickened.  Refrigerate until cold.
Add the next 4 ingredients to the chilled milk mixture; beat until thick and creamy, about 5 minutes.
Spoon about 2 T. of filling between 2 chocolate cake cookies.  Serve either chilled or at room temp.
