Honey Mustard Salmon

1/4 c. olive oil
3 T. Dijon or coarse brown mustard
2 T. honey
1/4 c. Italian-seasoned panko breadcrumbs
4  4-oz  salmon fillets
salt & pepper

Preheat oven to 400 degrees F.
Spray baking dish with non-stick cooking spray. Place salmon fillets in the baking dish.  Sprinkle with salt & pepper.
In small bowl, mix together the olive oil, mustard, and honey.  Spread over top of the salmon.  Top with the bread crumbs.
Bake 15-18 minutes in preheated oven, until fish flakes with a fork easily in the  middle.
