1/2 cup all-purpose flour
1/2 cup whole wheat flour
1/4 cup oat flour ( grind rolled oats in blender )
1/4 cup cornmeal
1 T. brown sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup milk
1/2 cup plain yogurt
2 eggs
1 T. canola oil
1 tsp. vanilla
Mix dry ingredients in a mixing bowl. In another bowl, beat the eggs; stir in the milk, yogurt, oil, and vanilla. Add wet ingredients to the dry ingredients and stir just until blended. Spray a skillet with non-stick cooking spray and heat over med. heat. Pour 1/4 cup of batter into hot skillet. When small bubbles appear on top of pancake, check to see if underside is light brown. Flip over and continue to cook another minute or two. Serve with maple syrup or applesauce.
Variations:
Chocolate chip pancakes: sprinkle mini chocolate chips on pancake before flipping over
Banana pancakes: add a mashed banana to the batter after mixing
Apple pancakes: lay thin slices of peeled apple on the pancake before flipping; sprinkle with cinnamon sugar
