Elvis Cupcakes





Banana. Peanut Butter. Bacon.  Supposedly, this was Elvis Presley's favorite sandwich  - thus the name of this cupcake!

Banana Cupcakes

 2 lg ripe bananas ( should have lots of black spots on peel)
1/2 cup sour cream
2 tsp. vanilla

1 1/4 sticks ( 10 T ) unsalted butter, softened
3/4 c. sugar
2 lg eggs, room temp.

2 c. cake flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp salt

4-5 pieces crisp bacon, crumbled

Preheat oven to 350 degrees and prepare muffin tin with 18 cupcake liners.

In blender or food processor, combine bananas, sour cream, and vanilla until smooth.

In bowl of stand mixer, beat butter until light and fluffy, about 2-3 minutes.   Slowly add sugar, beating for another 2 minutes.  Add eggs, one at a time, beating well after each addition.

Stir flour, baking soda, baking powder, and salt in another bowl.

With mixer on low speed, add flour and banana mixtures to the butter/sugar, beginning and ending with the flour.  Mix only enough to combine, scraping the bowl often.  Stir in the crumbled bacon. DO NOT OVERBEAT.

Spoon batter into cupcake tin, filling cups 3/4 full.  Bake at 350 for18-20 minutes.   Cool cupcakes in pan for 5 minutes, then remove to wire rack and cool completely.


Peanut Butter Frosting

1 c, creamy peanut butter
1/2 c. unsalted butter, softened (1 stick )
1 tsp vanilla
1/4 tsp salt
2 -3 c. powdered sugar
 1/4 c. heavy cream

Beat butter and peanut butter together until smooth.  Add the vanilla, salt, and powdered sugar, mixing together on low speed. scrape down the bowl.
Add the cream and beat on medium speed until mixture is light and smooth, 3-4 minutes.
Spoon frosting into pastry bag fitted with large round tip. Scoop out a little of each cupcakes, and pipe frosting into and on top of cupcake

Top with piece of crispy fried bacon.
