Sweet and Sour Chicken

4 chicken breasts, cut into bite-size pieces
1/2 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
3/4 c. corn starch
2 lg eggs, whisked
1/2 c. canola oil

1 c. sugar
1/3 c. ketchup
1 tsp garlic powder
1/2 c + 1 T. rice vinegar ( or distilled white )
1 T. soy sauce

Place the chicken, corn starch, salt, pepper, and garlic pwd in a large ziplock bag and shake until the chicken is evenly coated.
Heat 1/4 c. oil in a large frypan over medium heat. Dip the chicken in the egg and place in the pan with a fork.  Fry both sides of the chicken for about 2 minutes a piece. Line a baking sheet with foil and place the chicken on the pan.
Preheat oven to 325 degrees.
In a medium size bowl, whisk together all the ingredients for the sauce.
Pour the sauce over the chicken and bake for 20 minutes. Pull out of oven; turn chicken pieces over, and bake for another 20 minutes.
Served with steamed brown rice and steamed broccoli.
