Tuna Spaghetti brings back memories of Christmas Eves with my Dad's side of the family, my Grandma Maria, matriarch of the D family, in charge of the kitchen and the celebration! The menu always centered around spaghetti, with tuna sauce and anchovy sauce. Tuna was my favorite.
Tuna Sauce
1 can albacore tuna packed in olive oil, undrained
1/2 cup chopped onion
1 clove garlic, minced
28 oz can crushed tomatoes
1 T. dried oregano
1/2 tsp. salt
1/4 tsp. ground black pepper
1/8 tsp. red pepper flakes
Drain oil from can of tuna into a 2 quart saucepan. Add onion and garlic and saute over medium heat until soft, about 3 minutes. Add tuna, tomatoes, oregano, salt, pepper, and red pepper flakes. Simmer over medium-low heat for 30 minutes.
Serve over cooked spaghetti or rotini. Sprinkle with grated parmesan cheese.
