Survival Rice

( makes a lot ~ eat alone or use as a base for creating other meals )

2 cups brown rice
5 cups water
2 chicken or beef bouillon cubes
1 T. olive oil
1 T. lemon juice

Mix all ingredients in 2 qt. glass bowl; cover with plastic wrap. Microwave on high for 15 minutes, then cook on medium for 25 minutes. Let stand for 5 minutes. Fluff with fork before serving.
Store, covered, in refrigerator for 4-5 days.

Make it a Meal:
Mix 2 cups cooked rice with cooked chicken, can of diced tomatoes w/ garlic and basil; chopped black olives; heat through

Mix 2 cups cooked rice with cooked chicken, sliced mushrooms, can of cream of mushroom soup, 1/2 cup shredded swiss cheese, cooked broccoli; heat through

Mix 2 cups cooked rice with browned ground beef, can of Ro-tel tomatoes, 1 can of corn, 1/2 cup shredded cheddar; heat through

Mix 2 cups cooked rice with sliced kielbasa; can of diced tomatoes with garlic, onions, & peppers; heat through
