Low-Carb, Sugar-free Oat Pancakes

I have recently started following the Trim Healthy Mama eating plan and I love it.  It is a LOW GLYCEMIC lifestyle which puts you in the drivers seat. No counting points or calories.  It allows you to control carbs, fats, and calories in a way that contributes to healthy weight loss and just overall good health!   I won't describe it here, but if you want more information, go to their website, THM ,  or check out one of these helpful blogs.

Oat Flour Pancakes

2 c. rolled oats (use gluten-free oats if needed)
2 c. low-fat cottage cheese
2 c.  egg whites (about 18 lg eggs)
1/4 c. Pyure or Truvia sweetener (stevia sweetener)
2 tsp. vanilla extract
1 tsp. maple flavoring
1/4 tsp pink Himalayan salt
4 generous tsp. aluminum-free baking powder
coconut oil cooking spray

Put rolled oats in the blender in 1/2 c bathces and pulse until it becomes a fine powder.  Pour into mixing bowl and add cottage cheese, egg whites, sweetener, vanilla, maple flavoring,  salt, and baking powder.  Blend well with hand mixer.  Allow to sit while griddle is heating.

Lightly coat a non-stick griddle or fry pan with coconut oil cooking spray.  Heat to medium.  Spoon batter onto hot griddle and cook until golden, about 3 minutes. Flip and cook the other side until golden brown.
Makes about 18 pancakes.
Serving size:  3

For one serving:
1/2 c. rolled oats.
1/3 c. cottage cheese
1/3 c. egg whites ( about 2 lg eggs)
1 T. Pyure or Truvia sweetener
1/2 tsp vanilla
1/2 tsp maple flavoring
pinch pink Himalayan salt
generous 1/2 tsp baking powder
