Shrimp Scampi Bake

part of our traditional Italian Christmas Eve feast!



2 lbs. medium raw shrimp, shelled, deveined
1/2 c. butter (1 stick)
1 T. Dijon mustard
1 T. fresh lemon juice
3 T. chopped garlic
1 T. chopped parsley
1 T. Old Bay seasoning
1/2 c. Panko breadcrumbs
1/2 c. 6-cheese Italian blend

Preheat oven to 450 degrees.

In small saucepan over medium heat, combine butter, mustard, lemon juice, parsley, garlic.  Remove from heat when butter is melted.
Arrange shrimp is 13x9 glass baking dish.  Pour butter mixture over the top and lightly toss.  Sprinkle with breadcrumbs and shredded cheese.  Bake for 8-10 minutes, until shrimp are pink and opaque. ( watch carefully)

Serve over angel hair, linguini, or fettuccini pasta.
