Baked Crispy Chicken Breasts

1/2 cup mayonnaise ( I use Kraft or Hellmanns lite  )
1 tsp. chopped garlic
1 tsp. dried rosemary
1 tsp. grated lemon peel ( if I don't have fresh, I used dried)

1/2 c. plain bread crumbs ( or crushed croutons )
1/4 c. grated Parmesan cheese

4 boneless chicken breasts

Preheat oven to 375 degrees F.  Spray baking dish with non-stick cooking spray.

Combine mayonnaise, garlic, rosemary, and lemon peel in a small bowl.
In another small bowl, combine bread crumbs and parmesan.

Trim chicken breasts, if desired. Place in baking dish; season with salt & pepper.
Spread mayo mixture over each piece of chicken ( I use my fingers!). Then evenly top with bread crumb mixture.

Drizzle with a little olive oil or spray with non-stick spray.  Bake for 25 minutes or until chicken is no longer pink inside.

Serve with Rosemary Roasted Vegetables and tossed salad.
