This is an easy, delicious casserole for breakfast or brunch ( or any other meal for those of us who love breakfast-for-lunch-or-dinner! )
The base of the quiche is :
6-8 eggs
1/2 cup heavy cream
1/2 cup sour cream or Greek yogurt
1 1/2 cups shredded cheese
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp ground mustard
the addition of your choice of meat, veggies, and herbs!
Preheat oven to 375 degrees.
Spray 13x9 glass baking dish with cooking spray.
Whisk together the eggs, cream, sour cream and seasonings in a mixing bowl.
Mix together the meat, sauteed veggies and cheese and spread out in prepared baking dish. Pour the egg mixture over the top and jiggle the pan to disperse evenly throughout.
Bake for 40-45 minutes, until no longer liquid in the center.
WESTERN: sharp cheddar or colby jack; 4-6 oz chopped ham; 1/2 c. chopped onion and 1/2 c. bell pepper, sauteed in butter; 1/2 tsp garlic powder; 1/2 tsp onion powder
LORRAINE: 6 slices of cooked & crumbled bacon; swiss cheese or 1/2 swiss, 1/2 gruyere; 2 T. chopped chives; 1 small onion, chopped and sauteed; pinch cayenne; 1 tsp thyme
BROCCOLI CHEDDAR: 4 cups chopped & steamed broccoli florets; 1 small onion, chopped & sauteed; cheddar cheese; 1 tsp basil
SAUSAGE, SPINACH & MUSHROOM: 1 lb browned and drained ground Italian sausage; 1 c. sliced mushrooms, sauteed; 1 small onion, chopped and sauteed; 2 tsp. minced garlic, sauteed; 1/4 c. chopped sundried tomatoes; 2 c. fresh spinach leaves, chopped and sauteed; 1/4 c. grated parmesan; shredded smoked gouda cheese or cheddar
CHRISTMAS: 1/2 cheddar, 1/2 mozzarella; 1/4 c grated parmesan; 1 lb browned and drained breakfast sausage; 2 c. steamed broccoli florets; 1 chopped & sauteed red bell pepper; 1/2 c sauteed chopped onion; 1 tsp Italian seasoning
