yummy appetizer or snack - toasted bread topped with tomato, basil, balsamic vinegar mixture! mwah!
9 Roma or plum tomatoes, diced
1/2 c fresh basil leaves, chopped
1/3 c shredded Parmesan cheese
1 1/2 T minced fresh garlic
1 T balsamic vinegar
2 T olive oil
1/2 tsp salt
1/2 tsp black pepper
1 loaf crusty French or Italian bread, sliced into rounds
In large bowl, combine all the ingredients except the bread.(can make up to a few hours ahead and refrigerate)
Toast the sliced bread until golden. Spoon tomato mixture onto the warm toasted bread and serve immediately
