1 lb broccoli florets (1 large crown), steamed
1 1/2 lbs chicken, cut into bite-size cubes - leftover cooked chicken, or raw chicken works too
3/4 cup mayonnaise
3/4 cup sour cream or plain Greek yogurt
2 T lemon juice
1 lb button mushrooms, washed and sliced
1 tsp curry powder
1/2 tsp thyme
1/4 tsp rubbed sage
1/2 tsp paprika
1/2 cup parmesan cheese
Preheat oven to 350 degrees F.
Spray 13x9 glass baking dish with cooking spray.
Saute the sliced mushrooms in a skillet with 1 T butter or olive oil, until soft and dark
In a mixing bowl, combine the mayo, sour cream, lemon juice, curry powder, thyme, sage, paprika, and 1/4 c. parmesan cheese. Mix in the mushrooms, steamed broccoli and cubed chicken. Spread into the prepared baking dish and top with remaining 1/4 cup parmesan cheese.
Bake for 30 minutes.
