Russian Teacakes (Snowballs)

 Otherwise known as little balls of melt-in-your-mouth goodness ~

1 c. butter, softened

1/2 c. powdered sugar

1 tsp vanilla

2 1/4 c. all-purpose flour

3/4 c. very finely chopped nuts (I use walnuts)

1/4 tsp salt

more powdered sugar

 

Heat oven to 375° F

Mix together the butter, 1/2 c powdered sugar, and vanilla in a mixing bowl. Stir in flour, nuts, and salt to make dough that holds together.

Shape dough into 1" balls and place 1 inch apart on ungreased cookie sheet.

Bake 10-12 minutes, until set but not brown.  Remove to wire rack and cool for 2 minutes.  Roll warm cookies in powdered sugar and set on the rack to cool.  Sugar will melt onto surface of cookie.  Roll again in powdered sugar.
