Biscotti

2 cups sugar
6 eggs
1/2 cup vegetable oil
1 T. anise extract (or vanilla, orange, lemon, almond, etc.)
5-6 cups flour
1 1/2  T. baking powder
1 c. add-ins ( chopped almonds, macadamia nuts, chocolate chips, coconut, dried cranberries, etc)

Beat sugar, eggs, oil, and extract until creamy. Add dry ingredients; beat until fully incorporated. Turn onto a floured surface. Form into four 14" x 4" logs on 2 parchment-lined baking sheets. Bake at 350 degrees for 20 minutes.
Remove to cutting board, slice diagonally into 1" slices, and place back on baking sheets, cut side down. Bake an additional 10-12 minutes.
Cool completely. Store in an airtight container.
This makes a hard cookie that is great for dipping in coffee or cocoa! But they are good alone too!

Try different flavors of extract with add-ins - almond extract with 1 1/2 cups toasted slivered almonds; 2 shots espresso with 1 1/2 cups dark chocolate chips; 1 T. orange extract with 1 cup Craisins and 1 cup white chocolate chips; 1 T. almond extract with 1 1/2 cups dried cherries; 1 T. vanilla with 1 c. macadamia nuts; 1 T. orange extract with 1 cup chopped walnuts....

Maine Black Bear (honey, blueberries and choc chips)
Abominable Snowman (white chips, coconut)
Cindy Lou Who (crushed candy cane)
Pumpkin (1 cup puréed pumpkin, 1 tsp pumpkin pie spice, extra 1 cup flour)

Chocolate Peppermint (reduce flour by 1 cup and add 1 cup cocoa powder, sub peppermint for 1/2 of extract, add chocolate chips, drizzle with melted white chocolate and crushed candy canes)
