Double Apple Muffins

1 cup all-purpose flour
1 cup whole wheat flour
1/2 cup sugar
2 T. wheat germ
1 T. baking powder
1/4 tsp. nutmeg
1 small apple, peeled and finely chopped
1/2 cup raisins, if desired
1 cup apple juice
1/3 cup vegetable oil
1 egg, beaten

Preheat oven to 400 degrees F. Line 12 muffin cups with paper baking cups or spray with PAM. In large bowl, combine all-purpose flour, whole wheat flour, sugar, wheat germ, baking powder, and nutmeg. Add apples and raisins. Stir in apple juice, oil, and egg until moistened. Spoon batter into prepared muffin cups, filling 3/4 full. Sprinkle tops with cinnamon sugar. Bake at 400 degrees for 20-25 minutes, or until golden brown. Immediately remove from pans and cool on rack, OR tip each muffin in the muffin pan so that air can get underneath and the muffins won't "sweat".
Yummy served warm!
