1 15-oz container of ricotta cheese
4 cups all-purpose flour
1/2 tsp. salt
Mix the ricotta, flour and salt together in a large mixing bowl until it forms a soft, sticky dough. Turn out onto a well-floured surface. Pull off small handfuls of the dough and roll them in the flour into long ropes the thickness of a finger. Cut into 1-inch long pieces.
Put a large pot of salted water on to boil. When it comes to a rolling boil, drop in about 1/2 of the dumplings, and gently stir. After a few minutes, they will start rising to the top. Remove with a slotted spoon and place in a large serving bowl. Add the remaining dumplings and do the same thing.
Serve with your favorite homemade or jarred spaghetti sauce and grated Parmesan cheese.
