This is very yummy!
1 head cauliflower, chopped
1 med. onion, chopped
1 clove garlic, chopped
2 Tbl. butter
2 Tbl. flour
1/2 tsp. salt
2 cups ( or 1 can ) chicken broth
2 cups milk
1 1/2 cups shredded cheddar cheese
1/4 tsp. nutmeg
Place chopped cauliflower in microwaveble dish with 2-3 Tbl. water; cover with plastic wrap. Cook on high for 5-6 minutes, until tender. Set aside. In lg. saucepan, saute onions and garlic in butter until tender. Stir in flour and salt. Gradually add broth. Bring to a boil; cook and stir for 2 min. or until thickened. Reduce heat. Place half of cauliflower in blender container, add 1 cup milk; puree on med high until smooth. Pour out contents into soup. Puree remaining cauliflower with milk, and add to the pot. Heat 2 minutes, stirring. Add cheese, and nutmeg; stir until cheese melts.
Thin with additional milk if desired.
( you can substitute broccoli for cauliflower; omit the nutmeg )
