using on-plan sweetener makes this a THM-friendly S
1 3/4 c. oat flour (rolled oats ground in the blender to equal 1 3/4 cup)
1 tsp baking soda
1/2 tsp salt
1/3 c. sugar (or Pyure/Truvia)
2 ripe bananase, mashed (bananas should be dark yellow with black spots on the peel)
1/4 c. unsweetened applesauce
1/4 c. plain Greek yogurt
2 egg whites
1 tsp. vanilla
**1/2 -1 c. mini chocolate ships (Lily's Chocolate chips)
Preheat oven to 350 degrees F. Grease loaf pan with small amount of coconut oil.
Mix oat flour, baking soda, salt and sweetener in mixing bowl.
In separate bowl, mix all the wet ingredients until combined. Pour into the dry ingredients and stir.
Add chocolate chips, if desired.
Pour into prepared loaf pan.
Bakes at 350 for 30 minutes. Turn temp down to 325 and bake additional 10 minutes.
Remove from oven and let rest for 10 minutes.
Remove from pan to cooling rack and cool completely.
Wrap any uneaten bread in foil or plastic wrap.
