This smoothie combines several of the healthy ingredients found in the Trim Healthy Mama Big Boy Smoothies and my husband and I have been having one for breakfast or lunch almost every day during the COVIC-19 lockdown to boost our immune system.
1 c. unsweetened vanilla almond milk
1 lg handful fresh baby spinach and/or kale, packed
1/2 c frozen sliced strawberries
1/4 - frozen blueberries
1/4 - 1/2 c. frozen okra
1/2 c. whole milk plain Greek yogurt
1/2 - 1 tsp sweetener (I use Pyure stevia blend)
*1 packet vitamin C powder
*1/4 tsp multi-vitamin powder
1 T. collagen hydrolysate powder
Place all ingredients in large blender cup or container and blend on medium for 1 minute, pausing every 15 seconds, and then on high for 1-2 minutes, pausing every 30 seconds. Mixture should be a thick liquid you can drink with a straw with no chunks or pieces. Thin with water and blend longer if needed.
